Water temperature matters

Okay, so you’re making some pour-over coffee and you need to get your water to the perfect temperature. Somewhere between 195˚F and 205˚F depending upon who you believe (I’ve heard some finadamentalist coffee zealots say that the water MUST be exactly 197˚F or all hope is lost). You could buy a special kettle with a built-in thermometer like this OXO model for $99 and change. But if you already have a glass measuring cup, an instant-read thermometer, and a microwave, there’s an easy and cheaper way. Just measure out the same amount of water in the cup and use your instant-read thermometer and a little trial and error to find the ideal time to heat the water in your microwave. Once you’ve found that perfect setting, you can just repeat every time you pour a cup. In my microwave ,two cups of water heated at three minutes and four seconds results in exactly 198˚F. YMMV (Your Microwave May Vary). This method of achieving temperature perfection works great with an Aeropress or French press as well. And, if you love herbal teas, you will note that most such brews have their own favorite temp as well.
